Iv'e had the same thing happen from time to time on 1.5 (as well as
earlier versions, less frequently). Quitting xcode and starting up
again seems to get the scripts back into the info window for me though
it may not solve your problem...

Context:
OSX 10.3.8. Created new project in XCode using the "Applescript
Application" template. Nil changes other than, from Interface Builder,
I've added a button object to blank "MainMenu.nib" and checked the
"Event Handlers/Action/Clicked" within the Applescript palette of the
Info window.
Can someone please advise if I'm missing something or whether this is
a bug?
