What kind of routing devices are sitting on your network? For example, my Linksys [see: worthless] router still provides NAT functionality, and while I don't have a "firewall" per se turned on, it still filters multicast requests through the device (not on the local LAN, but from the WAN->LAN). Which could be where things are getting munged in your setup. Maybe a few more details as to the devices sitting in between points on your network. I don't think that the issue is so much that "connectivity stops" I think somewhere along the line multicast traffic isn't being passed around as much as it should. Like I mentioned earlier, try the dns-sd(1) "workaround" (actively browsing for services) next time it crops up to see if that is the actual issue here.
