Maybe I don't understand something about your situation.

How do you get "stripy" windows? In the nib, I made a document window with the Dialog theme brush. Maybe you are creating a Dialog Manager dialog?

All of our windows are created ourselves with CreateNewWindow, then controls are created in the window for each widget (a collection of C+ + wrappers for all UI items that was written way before Aqua, but has been constantly updated to use HIViews and neat stuff like that). No nibs here.
