Don't do it! Currently partitioning RAIDs is not supported by Apple's software. Your ability to do it will be very hit and miss, you will loose support options from Apple, and most/all of your drive utilities will loose the ability to work on the drive.


It was said at MacWorld in the Tiger Server session that 10.4 is bringing a big upgrade to AppleRAID and that one of the features it is bringing is RAID set partitioning.
