I faced this same issue. I wasn't happy about each user having 500MB
of fonts in their home dirs on the server, when I preferred that the
fonts be just on the client computer.
I moved the fonts installed by Word to the /Library/Fonts folder,
chowned and chmoded the fonts so that every user can see them, and
then removed "DoFonts" from the Word directory. Word checks for the
presence of "DoFonts"; if it finds it, then it will check the user
folder to see if fonts are installed. If they are not, it Word will
then install them.
If DoFonts is removed, Word will not check and will not install fonts
in the user folders. But if the fonts are in the right place and have
the right permissions, they will present and be just as functional as
otherwise.
I suspect that the slowdown is that as Word builds it's WYSIWYG font
menu, it has to read all 500MB of fonts from the home folder on the
Server into memory. That's a lot of reading to do, even over a fast
connection. I think that you'll find that moving the fonts to a the
client machine and then disabling Word from checking for fonts will
correct your issue.
