File Vault is kind of an all or nothing option. I've not used it, but I have
read about a couple issues with it. The biggest caveat, is that it encrypts
everything into one big image. If one file goes bad, you can lose
everything. I'd consider an open firmware password and making sure that auto
login is disabled.
