Could spotlight be at fault here?  Doesn't Spotlight support indexing
network shares out of the box in 10.5?  I would expect lots of disk
thrashing if several spotlight requests are made on home directories at the
same time.

I only bring this up because you are running 10.5.1 on both the client and
the server.

Is there anything in Activity Monitor that's using up a lot of CPU's when
the disk thrashing is occurring (on either the server, or the clients)?
