It's probably described in the documentation for Key-Value Coding.

Really? Why? Seems like Apple encourages it quite strongly, and I frakking hate square brackets.

I agree. Some people might have a religious objection to dots, but I find they're easier to type and make the overall syntax a lot clearer.
