of course one must bear in mind that, to carry out a conversion to your
newly created device CMYK in Photshop one must assign a source profile
(or the default will be used when the doc is opened <colourmanagement
off>).

The re-iteration sounds gmg like, and as such it may work well.

However, do bear in mind that multiple iteration can lead to greater
inaccuracy as you bump against device accuracy - I was advised to not
go more than 2 or 3 steps, save after each and compare. 
To compare accuracy you're going to need a very good <mark one eyeball>
OR, preferably, a utility like basICColor Control from
www.colour-solutions.de 14 day demo available. You'll also need proof
sheet or target proofer data, or an accurate profile for it [to use as
the desired target].
