Steve,
Without knowing the details of the color proofing system (such as if there
is a rip driving it) , it sounds like the Adobe Sheetfed coated v2 is being
used as the simulation profile in conjunction with the 9600 printer profile.

But that is just a guess.

As for making a small color correction, my guess again is that you are
swimming up stream until you know that the service provider can prove to you
the proofs  match or have a relationship to the printing press. One solution
would be to send out for a proof and then send the same file on another day
and then compare the result.
