This is precisely what all of the high end wide gamut display models, be they from NEC, Eizo, Samsung etc., do to "emulate" different gamuts. There is a programmable color processor that internally maps the input video into a different and smaller output gamut. It is effectively mixing colors to desaturate and alter the hue. The processor is not normally a full 3D LUT, so there are tradeoffs in doing this and it really is just an "emulation".

This feature is useful with wide gamut displays if you are working in a non-color managed application and want to emulate a smaller color gamut such as sRGB or AdobeRGB.

If you want to measure the true gamut and spectrums of the primaries you need to switch the monitor into it's native color gamut mode.
