SMTP / POP howto

Does anyone know of a simple HOWTO to get a Darwin or OS X box to function
as a maildrop and pop server?

My understanding is that there are three parts required:

- Set up sendmail to create mail-drops.
- Set up MX records in DNS to point to sendmail.
- Set up POP server to allow mail to be read from sendmail spool.

Is there a simple document (or documents) that guide me through this?
