- Set up sendmail to create mail-drops.

You need sendmail (or another MTA) to have the server accept and send mail for you. Postfix, Wmail, Exim are some others. Postfix is easier to work with than Sendmail.

- Set up MX records in DNS to point to sendmail.

You do not *need* MX records, but they are recommended. At least an A record pointing to the ip is needed. Also reverse DNS is something you will want as well since some mail servers reject mail from hosts without any reverse DNS.

- Set up POP server to allow mail to be read from sendmail spool.

Pop lets you check remotely. You do not need POP3 to check mail if you are logged into the box. I assume you wanted remote check ability? I would recommend against POP3 and go with something like IMAP since POP3 is not secure at all. Imap-uw is simple to setup. Also IMAP allows one to check email from anywhere and not worry about having local copies , has some more features.


Is there a simple document (or documents) that guide me through this?


Is this just for you or for a group of people?

If you want to use sendmail I would start at www.sendmail.org. Also you will need some basic understanding of DNS. Google is best there really. Setting up mail is not that hard but there are a lot of security implications for you and your ISP. You don't want to get blackholed or something heh.
