Neither of these are errors I'm familiar with, but they don't sound like PKI errors that Entourage usually assaults you with. Unfortunately I don't have both Entourage and an Intel Mac to test on. (I have an iMac DC but no Office and a PowerBook with Office and never the twain shall meet.)


I know that I am not choosing the incorrect certificate because the second available certificate warns that it doesn't match my e-mail address.

The only way to be sure is to inspect the certificate you're choosing, and check for 1) your email address, and 2) a keyUsage that includes digital signature.
