Two questions:
1) Does the datalogger's vendor document their serial protocol?
2) Are you willing to write Java software to do it on a Mac?
Without information on how to talk to the logging device, it won't
do you
any good to have a serial-port connector that can plug into it.
And even with the information about the serial-port protocol,
unless you or
someone else has already written Java software for it, you'll have
to do
that, too.
