Yeah - it's pretty straightforward if you have a Mac to build on. We don't run our builds on Macs, though and it would be nice if we could complete the process via Ant or even directly through Java. I guess you can build a DMG file using the ISO9660 format - but that doesn't support the compression and possibly the other niceties (like decorating the mounted icon, etc - which I think work via resource fork data).

Does anyone know if the native .dmg file format is documented anywhere in enough detail to implement a Java interface to it?

I don't know of anything that creates them cross-platform. On Mac OS X of course there's hdiutil that you can run with Runtime.exec().
