Sure, that's exactly what WebObjects is for. There is a very lively community for WebObjects. It beats other environments hands down, particularly when database access is  part of the game. Apple has deprecated some tools with Leopard because those tools had a mixed Java/ObjectiveC base and this combo is not available in 10.5.x However there is a very active open source project (WOLips and ProjectWonder) that integrate WebObjects development into Eclipse. Here is one of the most importants links http://wiki.objectstyle.org/confluence/display/WOL/Home. Apple is officially supporting the WOlips project and the tools integration into Eclipse. They themselves rely heavily upon WebObjects. The Apple Store, the iTunes Music Store and the developer connection site have been made with WebObjects. I myself have developed and/or participated in several very large WebObjects projects for international pharmaceutical and chemical companies and the public sector during the last 7 years. So, really, don't ignore WebObjects.
