After reading the Java 6 threads on the java-dev list, I want to say one thing:

I have found the employees on Apple's Java team who are part of this list to have been extremely responsive and helpful. They've had to take a lot of flack for the decisions their managers made. Whatever complaints I've made about the Java 6 on Leopard situation were not directed at them.

Thank you all for being so helpful and patient.

In particular, thanks to Scott Kovatch for his Java 6 DP uninstall solution. I've copied and pasted it and will apply it when I install Leopard.
