On the Mac, you'd use AppleScript, or rather Apple Events.

I expect there are ways of sending Apple Events from Java too, but for a basics, look at:

http://developer.apple.com/applescript/

Also, open the app Script Editor ( in /Applications ), and open iTunes dictionary. From here you can see what iTunes exposes to AppleScript.

For a higher-level control of iTunes scripting, you might also like to try Automator ( also in /Applications ).
