AFAIK Apple, didn't promise Java 6 with Leopard
we were told at WWDC2007 that Java 6 will be released shortly after 10.5 release
how shortly? no idea
Leopard is only 5 days old, so don't worry, be happy :-)
good sign that Apple removed Java6 prerelease, they, probably, cooking something for us
