Sorry, I have come late to this discussion but I do want to report
that the very sane folks at NOAA's (National Oceanic and Atmospheric
Administration) National Center for Tsunami Research are developing
a Tsunami forecast system (SIFT) for the US tsunami warning centers
that is completely written in Java. The majority of the developers
(me included) use Macs as their development platform but our
customers us Solaris, Linux, and Windows. I used to think of Mac as
a second class Java citizen with Window's JVMs the gold standard but
after Apple went Intel, I have fewer problems on Mac OS X than
Windows.

The only reason you need java for mac is for old applets or to
support the college community.
No person (no sane person) is going to develop a complete program
in java.
If you want full platform independency then you should write your
programs in perl or C...
