We had been using MacAdministrator for several years but it did not make the transition to OS X very well for us. I had too much trouble configuring it and gave up on it. It does print auditing reasonably well but has so many other functions that get in the way that I can't recommend it at this point.
I am looking into a new product called X2PA (for print auditing) which does auditing for ad agencies, etc. It's a server product.
I've exchanged email with them over the use of it in a lab setting and they say it can be adapted for this use. I will report on what I find out about this but it may be a while. So many other things to get done first...
