The only time I even deal with an image is when I'm doing a complete erase of the HD. Too much overhead in pushing out a new image every time an update comes out. Personally, I like managing the file system with Radmind ( http://www.radmind.org). There's a lot more flexibility for the admin with this approach, not to mention making it easier to customize your installation.
