Yes, we backup all our servers including OSXS. We are using dump and a remote tape device. This works nicely, but only on UFS volumes. If you are running some HFS partitions you will have a much harder time. We are backing up several OSXS machines to an old Sun with a Exabyte 10h loader attached.

There are several good ways to backup UFS partitions:
dump (I also have a patch to enable stacking tape drives)
tar (works well but doesn't support levels)
amanda (I think they have the client working, but not the server.)
rsync
Veritas NetBackup client (I tested this on UFS but not HFS.)

There are a few options for HFS partitions:
Share them through AFP to a machine running retrospect.
(This is usually doesn't perform to well and is limited by sharing paradigm.)
rsync the file to a UFS partition. (Doesn't get resource forks.)

The situation gets worse on PB. It looks like there are no working scsi tape drivers yet. You will be forced to use rmt "remote tape" to backup through another machine.
