Seen lot's of weirdness on Beige G3.... One thing that tends to work is not not
disable any alternate language installations - just take the default. Sounds
really crazy but I've seen it work time and time again.

Also make sure the partition you are installing on is the front partition if
you have multiple ones.

Sometimes nothing would work on one box but take the same hd into another box
and it would work there (same generation machine) and then take the drive back
to the original box and it will boot and run....
