Well, yes, "possible" with Boot Camp? Yes. But stupid for all the
reasons others have said related to drivers, support, and so on.
Under Parallels? Certainly, for evaluation on the desktop. It's even
a supported OS.
But under Parallels (or any desktop-class virtualization product) as
a server? Stupid.
But there is a possibility:
At WWDC, VMWare said it would be interested in bringing ESX Server to
the Apple platform, namely the Xserve. They said they'd even be
interested in enabling virtualizing multiple instances of Mac OS X
and Mac OS X Server if they got Apple's "blessing". Later that day, I
talked to Bud Tribble, who said he'd talked with VMWare's CEO just
the week prior, and explicitly said they'd both allow virtualization
of Mac OS X and Mac OS X Server as long as it was on Apple hardware
(which just means VMWare would have to make good faith technical
attempts to keep it on Apple hardware[1]), and would encourage VMWare
to bring ESX Server to the Apple platform as well.
This means you would have a *fully supported* way of running Mac OS X/
Mac OS X Server, Windows Server 2003, or frankly any other supported
x86 OS you wanted (supported by ESX Server, anyway) on an Xserve,
which is a really killer 1U platform for the money. Bud said that if
people wanted this, they should tell both their Apple *and* VMWare
channels. I know we've done this already. ;-)

[1] We already know people are running hacked versions of Mac OS X on
non-Apple hardware and even under VMWare on non-Apple hardware, but
in that state, it's totally unsupported and unupdateable via the
standard mechanisms...Apple definitely doesn't want there to be a way
of easily running a NON-hacked Mac OS X on non-Apple hardware.
