I have a simple but stupid question. We are trying to figure out a way to
have our mail, dns, and web in our dmz zone. What kind of processing power
would we need to be able to do just these 3 functions. Would a mini be able
to handle this? What if we just had a dns and web server, would the mini be
able to handle it with server software?
Is your mail IMAP or POP. IMAP points away from a mini.
How many users? The larger the number the less likely a mini.
How many web hits? 10k per day != mini. :)
Last year we benchmarked a Mac mini running Mac OS X (client) with
Apache 2+. The mini was easily able to handle 1000 hits per second
(using Apache bench with 32 simultaneous connections requesting a 2K
file).
There are a number of hosting services around the world that cater to
Mac mini hosting and they would undoubtedly have more to add to this
discussion. But, it seems clear that, depending on his particular
situation, Geron could do very well with a Mac mini for web, mail and
dns.

The disk drive in a mini isn't designed to be "pounded".
As as to whether or not you even want OS X Server, do you need more
than 10 people accessing shared files via AFP at a time? Do you have
complicated security requirements? Do you want/need networked homes?
