The mail spools.

Most likely /var/spool ;)

My list is completely blank, a likely byproduct (I guess) of me moving the database and mailstore to a separate Volume (mounted Xserve Raid). But I'd like to know for sure why this is the case.

Depends on how you "moved" it. --
