Who's right on this? Or if it's not a matter of who's right and who's
wrong - any suggestions on what's the better method of practice?

Reboot IMHO Daily is too often I recommend once a week.
The only reason a (normal) UNIX server should be rebooted is when kernel updates
are applied. This is one of the things I am dissatisfied with about OS X. A
reboot is required to apply some non-kernel updates.
I have had uptime in the hundreds of days before I needed to take servers down
for updates (My BSD boxes were up for 437 ;)).
