You could but your asking for a lot more work than really required due to the mysql backend, install a fresh MediaWiki in the other site root, configure it using a different database name.


I can also recommend a better approach, as soon as it's completed the installation dump the empty database to a file for later use and with a little apache trickery you can use aliases and go with a single global installation and only have to reference the config file (requires some minor edit so it uses DOCUMENT_ROOT to locate the file) on a domain basis and then adding more installation you would just change the database name in the file dump (and the hostname) which you could do in a php script and you've now made adding wiki's a breeze without actually wasting disk space on multiple installations of the same software (I did this already, works great).
