This will work fine. I just tested it with a couple of GPT formatted disk with AppleRAID v2 mirror and the volume mounted without any trouble. (The metadata for the raid volume in AppleRAID v1 is at the front before the volume itself. In AppleRAID, v2 partitions, the metadata is placed after the end of the volume data.)
