Did Apple tell you how to do a SMC reset?  It's pretty simple, just
shutdown the XServe by any means, unplug the AC for at least 15 seconds
and plug it back in (without the power button being held down) and then
start the XServe up by pressing the power button.  Other than that,
there really aren't any other procedures that don't involve hardware. 
I'm sure that was already done, but...

But, if I were you and you have the time to be without the XServe, box
it up and send it back if you can - depending on the return policies of
where you purchased it.

My reasoning for this is, if a clean software restore didn't fix the
problem, then there is a high likelihood of a hardware component being
defective.  Most likely, a logic board replacement would fix it, but
that is not a guarantee.

The biggest indicator of a hardware problem that you stated in your
email is that one of the 'temperatures' is showing 102 degrees.  This is
over the nominal temperatures for any of the sensors and may be the
reason why the fans are at full speed.  It could be a defective sensor
or something else.

If the place where you purchased from is going to give you a headache
about returning it and they state you will not get replacement for a
longer period of time than what you're willing to wait, then you can
have it repaired.  In that case, I would advise taking it to a local
Apple Authorized Service Provider in your area.  It shouldn't take too
long to repair as I did check availability of a some of the parts that I
would use to repair the XServe and it appears as if they are in stock. 
(But, each service provider has their own committments, schedules, etc...)
