Unfortunately, Server Admin will probably kill your extra ErrorDocument
directive next time you edit your site. If you still want use SA, you
might try putting the extra directive in a separate *.conf file and add an
Include directive in the appropriate location. (This worked for me for a
little bit, but then some other changes caused SA to give up on reading my
hand-editted files.)
An include works very good for this.
And as a last resort you can always lock the file or change it's
permissions/ownership (the this later option often get's "fixed").
