From what you're asking, I think you're actually asking how to tie
address book into LDAP, and not Mail. You could specify this in
the contact pane of the Directory Services App, or, in Address
book preferences, go to the LDAP pane and add an entry here. As a
side note, your search base here will be from a different part of
the tree to the one used by Directory Services - the following
works for me with a standard OS X Server install -
cn=users,dc=server,dc=example,dc=com

IIRC, LDAP entries in Address Book don't show up unless you do a
search.
You recall correctly, but the act of typing in someone's name in Mail
does the same thing as searching in Address Book - so should answer
the original question just fine.
