| Fluke Networks makes a product(NetFlow Tracker) that harvests NetFlow/ IPFIX data from your routers and switches, which would give you 1 minute granularity of all traffic traversing your network. But if your just wanting to sniff packets ( READ MESSAGES) wireshark works will.
