Sure, you can re-create it. As long as the admin account still exists, you
should be able to log in to a console session and run some commands to
create a new home. From the login screen, click Other, supply ">console" as
the name and click Log In. You'll be taken to the console. Supply your admin
credentials to log in, and then issue the following commands:

    sudo ditto /System/Library/User\ Template/English/lproj /Users/admin
    sudo chown -R admin:admin /Users/admin
    logout

Now just log in. You should have a home directory.
