Th general consensus so far is that profile manager is broken beyond use, and web hosting is very problematic unless you only manage it via apache's configuration files. I totally share his sentiment, but I've been persevering as I have a client with a large deployment of iPads planned this month (great timing, eh?) I've personally sunk about 60 hours of personal time into figuring out issues and workarounds in Lion Server and profile manager. From botched upgrades, to service corrupting themselves with no real rhyme or reason. Profiles never seeming to push and when they do, often pushing the wrong settings.
It's rather frustrating, hope to see a 10.7.1, or a server update of some kind ASAP.
