If you are not seeing the component video listed and you know your camera has one of the pixel YUV pixel formats that the QuickTimeIIDCDigitzer.component supports (YUV 4:2:2 8bit/component or YUV 4:1:1 12bits/pixel) than that means you ran across the aforementioned bug in the QuickTimeIIDCDigitzer.component in which I would mistakenly ignore one of Format7's "modes" if it it contained any pixel format that I didn't support.

So until that fix is released (and as usual, "no comment" on release dates) you will not be able to access that setting.
