Hi Ken,
A free way to digitize analog audio on MacOS X would be to use Spark ME - http://www.macupdate.com/info.php/id/10925, or Audacity - http://audacity.sourceforge.net/mac.php to capture the audio in .aif format to computer.
Both of these apps will allow you to cut, add fades, etc.
Then use iTunes to compress the audio to .mp3 or .mp4. If you check the box that says "Soundcheck" under: iTunes --> Preferences --> Effects -->, iTunes will try to normalize the audio to it loudest potential (although it's best to get the hottest signal without distorting when you capture it to disk).
