Metadata, mp4, m4v, and mov

So, the iPod with Video can play content labeled mp4, m4v, and mov, that uses AAC encoding, MPEG-4 or H.264 video encoding, and has appropriate rate and size.

Could someone briefly explain to me the differences in files with mp4, m4v, and mov extensions? I know either MPEG-4 or H.264 encoded content can ride in any of the files, and the iPod can play them all. But there at least seem to be differences in the metadata format in mp4 and mov.

I'd like to include a sprite and text track, also possibly Chapters, in my file. Does that limit me to .mov?

Will using a .mov limit what devices can play back my content? That is, can the PSP play back some particular mp4 or m4v format, but not mov?
