Well I just set the focus to infinity and leave the camera on manual. I don't get into the hyperfocal distance blah, blah, blah. People seem to get far too technical and it doesn't ever seem to reflect in the quality of their work. Not mentioning any names but a group of people on one certain email list go on and on running test after test. When you see their work it's average. Maybe if they spent more time shooting and less time fussing over the small details their actually panoramas would improve.
I've just been testing the 10-17 on the D3 in FF mode and it's very nice. Apart from the Nikon 16mm what other fisheye will cove the full-frame ? I don't even think a shaved Nikon 10.5 or Sigma 10mm will cover the full-frame. And there's no way I'm going to find out.

You don't want to use the Tokina 10-17mm for panoramas because it has no manual focus override. It's always in auto-focus and if the focus changes from shot to shot then your lens optimization parameters (a,b,c,d,e) will vary slightly which means you won't get very good stitches. You need a fisheye lens that has manual focus so that the focus does not change at all from shot to shot in order to ensure continuity in the lens parameters.
