Applescript is your friend!

Send the following UNIX command:
    osascript << EOF
    tell application "Finder"
       get the name of processes whose file type is "APPL"
    end tell
    EOF

Example output:
Bob's Computer (192.168.1.222)
loginwindow, ARDAgent, Dock, SystemUIServer, iTunesHelper, ClassicAuxInput, Microsoft Word, Microsoft Database Daemon, Microsoft Excel, Terminal, TextEdit, Netscape Communicatorâ„¢, Internet Explorer, Safari, iTunes, Printer Setup Utility, firefox-bin, ScreenSaverEngine, System Events
