Am I correct in stating, from reading past list mail, that currently the best way to install Microsoft Office Updates on client machines is to install the update on one machine then read the install log, then package the files that were modified/copied onto the machine and then use that package with ARD?

Yes, that is one way.

other ways:
1. Copy the entire Office folder. Obviously this is additional network traffic.

2. If you distrust the install log (or the program doesn't make one), use a tool like Tripwire or Loggen to figure out what files changed.
