I know in ARD you can run a remote install of .pkg files but how can I run .dmg files remotely? I've looked through the forums and have not found much on it.

If by 'run' you mean 'mount' then you may be able to just use 'hdiutil mount' like normal as a unix command. I've not tried this with ARD though.
