Similar issues have been discussed on the list before (see the
archives).
You can either:
1. use ARD to click through the GUI-only installer
or
2. If you're lucky, the update makes a log file. Install the
update on one computer, then check the log for changed files.
3. Use a tool like Loggen or tripwire to monitor changed files,
then install the update.
With 2 or 3, once you have the changed files, build a package
containing the changed files, and use ARD to install it. While
you're cursing Adobe, be sure to send them an email asking them to
start distributing updates as packages or at least command-line
capable installers.
