I just started using Composer from JAMF Software (http://jamfsoftware.com/products/composer.php) $49US for the "ARD version" of the software. Composer creates a snapshot of a system, then creates a package, collects the files for you to manually create a package or creates a DMG file based on differences in snapshots. The product works quite well and has a nice interface. I've been using it to collect files, then I create the package myself in PackageMaker. I then push packages with ARD.
