Peter,
You might want to consider looking at the 3rd-party log analysis tools
that are available.  They can take the raw request logs, analyze the
data, and display it in a much more useful format.  You'll probably find
that they have the ability to display graph of streaming server
bandwidth usage over a period of time, which is what it sounds like
you're looking for.
