Hi Jim,
Your MPEG4 files are probably not "hinted."  Movie files need to be
hinted in order to stream properly.  If you have QuickTime Pro
available, try opening the movie and exporting the movie as a "hinted"
MPEG4 file.  Even if the file had hint tracks, re-exporting from QT Pro
is likely to solve any problems that may have been caused by
incompatible encoding.

As for documentation, try clicking the help icon in the QTSS web admin
(the question mark) in order to get web-based help.  We also have some
documentation online at http://www.apple.com/quicktime/products/qtss/
