Multiple live audio streams are pretty easy, just duplicate QT
Broadcaster, and you can set each one to use a different USB audio
input device, or create different data rate streams from the same
device.
Have not tried it yet. I know it can encode different data rates from
the same video input.
It sounds like, with multiple firewire inputs or cards, it can encode
different live streams simultaneously.
You might have to go to multiple encoding computers.
