Apple provide all the basics for the EZ-USB. I'm not sure about OS 9, but for OS X, if you already have the Developer Tools installed you should have plenty to get you going.

Hope this helps, there's other stuff that you should probably read regarding the IOKit in general, but it's all contained with the documentation provided with the OS X Dev Tools and linked to from the above references. If you're using OS 9, AFAIK there's also info relating directly to the EZ-USB in the USB DDK.
